For nearly two decades before leading our team, Chef Eric left his mark on notable institutions in New York such as Nice Matin. With roots and his family here, in New Jersey, we are so happy to welcome home one of its native sons. #KeepNJTalentInNJ
Chef Eric’s guiding principle is simple: Thoughtfully handled and prepared, high-quality ingredients create dishes that nourish the soul. He says he first learned this lesson from his family.
“I grew up in an Italian kitchen, cooking with my mother and grandmother. I was always eating, tasting, and getting fresh cuts straight off the knife” he says of his earliest memories in the kitchen. So, a love for food lies deep within his DNA.
He also has been fortunate to work for chefs and restaurants at all points along the culinary spectrum: from Italian cuisine to American to French. Chef Eric takes this well-rounded culinary experience as inspiration for his new menus at AKB.
“I love being a chef. Yes, it’s challenging. But being able to unite people through food — it’s truly energizing.” says Eric.
